Q & A with Marisa McClellan + Giveaway: Food in Jars Cookbook and a Blossom Trivet

Food in Jars and Blossom Trivet

We’ve been fans of Marisa McClellan, blogger at Food in Jars, for quite awhile. However, it wasn’t until last month that we had the chance to meet her. Marisa shared her Spiced Plum Preserves recipe, along with lots of other great canning tips, at Lemon Street Market with an Essen Cooking School canning demonstration. We went home thinking … if anyone can demystify the art of canning, Marisa can!

Since we both have a love of jars and all things canning, we decided to giveaway a signed copy of her cookbook Food in Jars: Preserving in Small Batches Year-Round, as well as a Blossom Trivet by Spice Ratchet, which Marisa raved about during the canning demonstration. But, before we get to the giveaway details, we wanted to share a few thoughts from Marisa (aka Food in Jars).

Fillmore: Although the traditional canning season is coming to a close, that doesn’t mean we stop canning. What do you look forward to canning in the months ahead?

Food in Jars: When fall rolls around, I look forward to making jams, jellies, butters, and chutneys from apples, pears, persimmons, and quince. There are a number of recipes on my blog for these autumnal preserves. I’m a particular fan of the Pear Vanilla Jam and the Persimmon and Pear Chutney. Also, the recipe in the book for Honey Lemon Apple Jam is one that is quite delicious this time of year.Food in Jars Cookbook

Fillmore: We are so excited to giveaway a signed copy of your book, Food in Jars: Preserving in Small Batches Year-Round. Tell us a little bit about what inspired you to write it.

Food in Jars: As soon as I started actively canning several years ago, I knew that there was space in the cookbook world that focused on small, modern recipes that didn’t require many, many cups of sugar and used reasonable volumes of fruits and vegetables. That niche, coupled with my love of canning, naturally led to the book.

Fillmore: Do you have a favorite recipe or two that are always staples in your pantry?

Food in Jars: When it comes to my own pantry, I always make sure to have a couple jars of Tomato Jam on hand and Apricot Butter. Both are things that aren’t easy to come by at the grocery store and make my daily meals so much more delicious. Just because those are my staples doesn’t mean that everyone should make and stock those items. It will take all new canners a little bit of trial and error to determine what their must-haves are.

Fillmore: At the canning demonstration you raved about using a silicone Blossom Trivet, which we are including in our giveaway. Tell us a little bit about your discovery of this handy tool, which has replaced the traditional canning rack, and why you recommend/use it.

Food in Jars: The use of the Blossom Trivet as a canning tool was born out of my desire to find a better canning rack. Most traditional canning racks are made of metal and so they don’t hold up to regular boiling. Using a rack made of silicone means that it doesn’t rust or break down in the water. It also is a bit more flexible than a traditional rack, because it works in a great number of different-sized pots.

Fillmore: Of course, jars offer a whole other life beyond canning. What are some of the ways you use jars beyond canning?

Food in Jars: I adore canning jars for any number of tasks. I often use the pint-and-a-half jars as drinking glasses. I keep leftovers in wide-mouth quarts and store dry goods in the half-gallon size. My husband’s LEGO collection lives in a few different jars and my spices reside in a bunch of the wide-mouth half-pints. They are incredibly versatile!4 ounce tapered jar

    I love this book and am sad I have to return it to the library this week.
    In the winter is when I can finally get around to making some jams from berries I froze during the summer.

    Pickles! Especially dill green bean pickles and dill summer squash and zucchini pickles (they hold up really well to pickling and the taste/texture is great).

    pumpkin butter, apple cider jelly, and gingered pear rhubarb jam. The combine the smells of fall and canning up small batches helps to warm up a chilly house on those mornings when I just am not willing to turn on the heat for the season just quite yet!

    Apple Pie Filling is a great thing to can and makes lovely hostess and Christmas gifts. Just make a syrup and put the apple chunks in a large wide mouth jar with the syrup and process for 20 minutes in a canner. Great all winter long for a quick apple crisp

    My favorite recipe, hands down, to can this time of year is fall raspberry jam. It’s such a simple, straightforward recipe but it is SO very good. I love eating it in the depths of winter- it has such a bright taste that always seems to reminds me of the end of summer. : )

    I really liked making apple butter and apple sauce. I know tomatoes aren’t really ‘fall’, but I loved making sauce this season (I’m a newbie). And I made a peach barbecue sauce that turned out fabulous.

    I have canned many, many quarts of applesauce and strawberry applesauce for my kids this fall. I am going to can come apple pie filling next weekend. I would LOVE a copy of this book – I have made the tomato jam she talks about and it’s sweet and spicy and probably the best thing I’ve ever canned!!

    My favorite thing to can in winter is cranberry-orange relish…we always have it fresh at Thanksgiving at my in-laws’, but it’s such a great flavor I crave it throughout the year, so I take advantage of seasonal cranberry sales and make a batch. :)

    I like doing applesauce. I know its not really fancy, but I love leavin it chunky and thats hard to find in most stores. Plus everyone likes applesauce so its something everyone looks forward to getting. Cant beat that!

    Favorite fall canning…’End of the Garden Pickles’ and ‘Apple Butter’!

    I saved all the cores and peels from apples and pears this fall (dehydrated, jam, frozen pies, etc.). Planning to cook them and use the juice for jelly. It’s an experiment that I read about on line, but I like the idea of using what would otherwise go to waste. I bag my apples on the tree to keep out worms so no pesticides to worry about!

    I just made a batch of Marisa’s Pear Vanilla jam ~ delicious! I also love to make applesauce this time of year. I’m looking forward to trying my hand at jelly during the winter; since it’ll be made with juice, I have the main ingredients already frozen and waiting.

    My favorite thing to can in the fall are apples. My grandmother taught me a spiced apple preserve that reminds me of all the visits we had with her.

    I can more than 200 pounds of tomatoes, which we eat at least once a week as sauce for pizza or pasta, or as an ingredient for a soup or stew. It always feels like we’re getting a healthy dose of vitamin C with each meal!

    I live in California, so I’ll admit that my fall canning looks an awful lot like my summer canning. Our markets are still full of strawberries, peaches, plums, etc. (The rest of the country can now commence throwing things at me :-) That said, my favorite fall canning is tons and tons of tomato products. We go through Marissa’s Tomato Jam like crazy around here, and I also do a variety of salsas and plain old canned tomatoes for winter sauces and soups. Thanks for the excellent giveaway!

    In the winter there is such an abundance of apples and so many different varieties, I like to make applesauce with the different apples or a combination of varieties and see what the subtle differences in flavor are.

    I LOVE Gingered Zucchini Marmalade. It is delicious with cream cheese – it just makes a great flavor combination. I hope to find some zucchinis at the market this weekend so I can make bread & butter pickles and the marmalade, since I somehow didn’t put any up yet this summer!

    My favorite thing to can in winter is Crock Pot Pumpkin Butter – I buy all different sizes/kinds of pumpkins & squashes for outdoor fall decoration – I do not carve them. When frost threatens I bring them in & start baking them in preparation for pumpkin butter. Yum!

    I love the orange color of the trivet pictured. The thought of boiling it and not having it damaged is impressive. I can jars of chow chow for gifts, so I’ll be ordering a 2nd and 3rd trivet even if I win.

      Yes! My mother actually uses hers in her old agate tea kettle when she has just a couple jars of whole fruit or when she’s canning little jars…they get all rocky and don’t fit well in the traditional rack.

    As I am starting to think about Christmas gifts, two recipes come to mind: Bacon-Persimmon and Bacon-Cranberry Chutney. These are tasty, luscious, decadent treats that I cobbled together from several different recipes. Every time make it, the chutney comes out different. That’s how we know that it is lovingly homemade.

    I love to make homemade apple butter in the fall. My father and I use my grandmother’s copper kettle over a fire outside to make the apple butter. It’s an October tradition that we have recently started, and each time I open the jar, I think about the fun we had while making the apple butter.

    I LOVE fall canning, since the weather is a bit crisper and I feel much more like being in the kitchen around a hot stove than I do in midsummer. I’ve been making apple and pear butter, and this year I also tried making Italian plum jam with star anise (from Marisa’s blog), which is life changing.

    My favorite thing to can this time of year might be fruit butters, they are SO luxurious and envelope the house in comfortable aromas!

    wow! what a list of comments! i already have this book and delight in canning my way through each page. this year got into all the OTHER butters and am going to try pumpkin butter this year. the book would give my gift giving list a break and the trivet sounds great too. i never get picked for these giveaways, but i keep trying. now to go check out those sweet little 4oz jars

    I love watching red plums turn into jam: their beautiful bright skins turn the jam burgundy, and the sweet-tart combination is divine throughout the fall and winter.

    I love to can marmalades and I have a salsa recipe that can use canned tomatoes, which is a great option when needed in midwinter. Plus I love doing syrups, like Praline Sauce as gifts.

    In the fall, I love canning applesauce for the year — it feels like such a victory when something lasts (i.e. enough on our shelves) until the following harvest! Of course, come winter, I take the raspberries that we’ve gathered out of the freezer and turn it into jam — at a time of year that is plenty cool and quiet for canning…

    Right now I am heavily into green tomato jam and pear-vanilla butter. But over the winter I will be using the great citrus fruits that will come into our stores (no citrus trees here in the midwest!) for some great marmalades. Right now I am up to 18 different kinds of jam for 2012, so you know what is on my Christmas giving list! Oh, and maybe some cordials. Thank you for sharing.     my favorite jars are 4oz , i love to use them making gift baskets with salsa, apple butter, ( i want to try spiced pear butter next) marmalade and my favorite thing to put in them is chicken stock made from chicken feet and veggies :) and then i pressure can ea of those of course…..and they are great for making small amts of spiced butter……..for fun i keep in fridge :) if i won i would use for apple butter :)

    I love putting up yellow raspberry jam and zucchini pickles. I get really tired of putting up apple sauce, but I do it anyway, when it comes time for Latkas, there is nothing like homemade applesauce!

    My favorite thing to can in the fall is a sugar free blueberry pear jam. I am trying to watch my intake of sugar but I hate to give up a topping for my toast, so this is perfect. I found this recipe years ago before sugar free was cool and a friend gave me a bushel of pears from her tree. It reminds me of friendship.

    Oh my! I love to can in the fall and winter. I love making pickled beets and crabapple jelly. When the snow starts flying, I pull out all the berries I froze during the summer when I was too busy to can, and make all kinds of things!

    My favorite thing to can this winter is going to be sweet potatoes and winter squash. My husband and I have developed a taste for all things mashed, and pressure canning them will make it so easy to mash and serve. Then, I’ll be doing apple pie filling, and finally I’ll be making wild grape jelly from juice that I froze this summer.
